Prep and Cooking Time: 30 minutes


1 medium onion
3 large Portobello mushrooms
2 Tbsp olive oil, divided
¼ tsp sea salt
4 slices of good bread, any kind
Kite Hill or Toffuti cream cheese, to serve
A-1 Steak Sauce, to serve
Fresh cracked black pepper


Finely-chop the onion and cut the mushrooms into roughly 1 inch thick slices. Set aside.

Sauté the chopped onion in 1 Tbsp olive oil over low heat. Cook until caramelized, 15 – 20 minutes. Transfer the onion to a small bowl.

Sauté the mushrooms in 1 Tbsp olive oil and the salt. Cook until the mushrooms have released their liquid and then the liquid has cooked off, about 5 – 10 minutes. Remove from heat.

Now, build the sandwiches:

Toast the bread. Spread a layer of cream cheese on each piece of bread. Add mushroom slices and caramelized onions. Drizzle with a little A-1 Sauce, and top with fresh cracked black pepper. Close the sandwich, slice in half, and enjoy.
